[BUG] version still shows 1.5.0 in release v1.6.0

Describe the bug 🐛
after updating to v1.6.0 "cscli bouncers list" still shows 1.5.0 for version.

Expected behavior 👀
should show 1.6.0

Version:

• OS: Docker
• Traefik version: 3.6.14
• Plugin version: v1.6.0

To Reproduce
Steps to reproduce the behavior:

1. update to v1.6.0
2. check version with "cscli bouncers list"

Hi, yes, our automation that overwrite the version on release isn't working yet.

@maxlerebourg opened a PR to fix this #324, should be in next patch release
The fix is for now to do it manually and replace version with 1.6.X

Can you explain how to do it manually? I've tried to modify static file with 1.6.X without sucesss. Is there a way to use dev or edge tag?
